Maple Dijon Salmon

You know that feeling when you get home from work and really don't feel like doing anything? You know, the kind of slump where even ordering takeout sounds like a hassle, and you really just can't be bothered?

Come, my friend, to Fieldhouse Kitchen.

Because even though you don't feel like doing anything, doesn't mean that you're not hungry for a good meal.This is a meal that doesn't require any mincing, chopping, or even washing. All you need to do is throw three ingredients in a bowl and stir. Add your salmon, let it marinate, then bake it.

And if you're too lazy to measure, the marinade is equal parts of all ingredients.

The salmon comes out sweet, smoky and perfectly tender. I also bake it in foil for easy cleanup. Because even if I had a dishwasher, that would be too much effort.

Here's what you'll need for this salmon (serves 2):

  • 2 salmon filets (or one, for two)

  • 2 tablespoons Dijon mustard

  • 2 tablespoons soy sauce

  • 2 tablespoons maple syrup

Begin by preheating your oven to 450 degrees F.

Whisk together your Dijon, soy sauce and maple syrup.

Pour the marinade into a bag or container and add your salmon. Let the salmon marinate for at least 15 minutes.Place your salmon on a baking sheet, or in tin foil on a baking sheet, and bake for 10-14 minutes.

Remove from the oven, plate and enjoy.
